- 4 oz sharp cheddar cheese, cut into cubes
- 1 large egg
- ½ cup almond flour
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp paprika
- ½ tsp black pepper
- 1 tsp salt
- 1 tbsp fresh parsley (optional)
- 2 tbsp olive oil or butter (for frying)
Optional Keto Dipping Sauce
- Sour cream or keto garlic aioli
Instructions
- In a large bowl, mix ground beef, egg, almond flour, and all seasonings.
- Take a small portion of meat mixture, flatten it, and place a cheddar cube in the center.
- Wrap the meat around the cheese and roll into a ball.
- Heat olive oil or butter in a skillet over medium heat.
- Cook meatballs for 8–10 minutes, turning until golden brown and fully cooked.
- Rest for 2 minutes before serving to keep cheese intact.
