Salmon
- 2 salmon fillets (170–200 g each), skin on or off
- 1 tbsp olive oil
- Salt to taste

Chunky Basil Pesto
- 1½ cups fresh basil leaves
- ¼ cup olive oil
- ¼ cup pine nuts or walnuts
- 2 cloves garlic, minced
- ¼ cup Parmesan cheese, grated
- Salt to taste

Instructions
- Pat salmon fillets dry and season with salt and black pepper.
