- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 lb (450g) ground beef (or lamb/chicken)
- ½ tsp smoked paprika
- ½ tsp dried oregano
- ¼ tsp chili flakes (optional)
- Salt & pepper, to taste
- 2 tbsp tomato paste or sugar-free ketchup
- ¼ cup shredded cheese (optional, for extra richness)

Step 1: Make the Dough
- In a microwave-safe bowl, melt mozzarella and cream cheese together (about 60–90 seconds).
- Stir until smooth, then add almond flour, egg, baking powder, and salt.
- Mix until a soft dough forms. (If sticky, chill in the fridge for 10–15 minutes.)
Step 2: Cook the Filling
- Heat olive oil in a skillet over medium heat.
- Add onion and garlic; sauté until translucent.
- Add ground beef and cook until browned.
- Mix in spices, tomato paste, and cheese.
- Cook 3–4 more minutes until thickened. Let cool slightly.
Step 3: Assemble the Pies
- Preheat oven to 375°F (190°C).
- Roll out the dough between two parchment sheets.
- Cut into circles (about 4–5 inches wide).
- Place a spoonful of filling in the center of each circle, fold in half, and seal edges with a fork.
