Ingredients (Makes 8–10 Fat Bombs)
- ½ cup coconut butter (or thick coconut cream)
- ¼ cup coconut oil, melted
- 2 tbsp powdered erythritol or monk fruit sweetener
- 1½ tsp matcha green tea powder
- ½ tsp vanilla extract
- ¼ tsp salt
- ½ cup unsweetened shredded coconut (for coating)
Instructions
- In a bowl, whisk coconut butter and melted coconut oil until smooth.
- Add sweetener, matcha powder, vanilla, and salt. Mix until fully combined.
- Chill mixture for 10–15 minutes until slightly firm.
- Scoop and roll into bite-sized balls.
- Roll each ball in shredded coconut to coat evenly.
- Place on parchment-lined tray and refrigerate until firm.
Store chilled.
