- 2 cups green cabbage, thinly sliced
- ½ cup black beans, cooked & drained (used sparingly for keto balance)
- 1 cup fresh tomatoes, chopped
- ½ medium onion, sliced
- 2 cloves garlic, minced
- 1 small green chili or jalapeño, sliced
Fats & Seasoning
- 2 tbsp olive oil or avocado oil
- 1½ tsp chili powder
- 1 tsp ground cumin
- ½ tsp smoked paprika
- Salt to taste
- Black pepper to taste
Garnish
- Fresh cilantro, chopped
- Lime wedges
Instructions
- Heat the oil in a large skillet over medium heat.
- Add onion and garlic, sauté until soft and fragrant.
- Add ground pork, breaking it up. Cook until browned and fully cooked.
- Stir in chili powder, cumin, smoked paprika, salt, and pepper.
- Add tomatoes and green chili, cook until slightly saucy.
- Fold in cabbage, stir-fry for 4–6 minutes until tender but not mushy.
- Gently mix in black beans and cook for another 2 minutes.
- Taste and adjust seasoning.
- Remove from heat, garnish with fresh cilantro and serve with lime.
