Hi, I’m Maria De Souza, Food & Nutrition Writer, and I run MyDiet360.

My Expertise
Alongside all the hands-on experimenting in my kitchen, I also bring a formal background to the table. I’m a nutrition degree holder, which means I understand the science behind food just as much as I love playing with flavor. That education helps me break down ingredients, simplify what actually matters, and create meals that don’t just taste great — they make sense.
It’s given me a strong foundation for understanding how recipes can be lighter, lower-calorie, or more balanced without losing the comfort and joy that make people excited to eat well in the first place.
When it comes to my expertise, it really comes down to one thing: making food that tastes amazing, feels indulgent, and still supports weight loss — without taking all night to cook. I’ve spent years in my kitchen focused less on theory and more on results. Taste, texture, and that “wow, I could actually eat this every day” feeling matter to me. I’ve cooked the same recipes dozens (sometimes hundreds) of times, adjusting tiny details until they finally hit that sweet spot where flavor and function meet.
That’s how I ended up with:
Quick recipes are my thing. Most of what I share takes 20–40 minutes start to finish, uses ingredients you can actually find, and delivers big, restaurant-level flavor without complicated steps or strange add-ins.
I’ve burned batches, overcooked tofu, dealt with gummy keto doughs, broken sauces, and bland “diet” versions of meals that deserved better. Through all that trial and error, I figured out what really works — how long to cook things for maximum crunch, how to balance sauces so they cling just right, and which simple swaps lower carbs or points without killing the soul of a dish.
I started this little corner of the internet because I got tired of seeing people struggle with boring “diet food” that tasted like cardboard or recipes so fussy they took all day. I just want to help regular folks—like me, like you—eat really good meals that actually help with weight loss, energy, and feeling decent in your own skin, without turning the kitchen into a science lab.
Honestly, the real knowledge came from years (and years) of messing around in my own kitchen. I’ve read stacks of books on keto, vegan eating, low-carb science, macros, intermittent fasting, you name it. More importantly, I’ve tested hundreds of recipes—burned a few pans, wasted ingredients, tweaked things until they actually worked for busy days, family dinners, or when you’re just craving something satisfying that won’t derail your goals.
Keto bread that doesn’t taste like eggs? Vegan Pad Thai loaded with flavor but keeps the calories in check? Air fryer hacks that make “fried” food feel legit without the oil bath? Weight Watchers-friendly versions of comfort classics? That’s the stuff I love figuring out and sharing here. No gatekeeping, no complicated jargon—just straightforward recipes using stuff you can actually find at the grocery store, plus meal plans that fit real life
How MyDiet360 Started
I’ve always loved experimenting in the kitchen, trying to make meals that are tasty, simple, and nutritious. Like many home cooks, I wanted food that fit real life not extreme diets or fancy ingredients.
One experience that really shaped the site was discovering the air fryer. Preparing a quick, satisfying dish with less oil and minimal cleanup showed me that healthy eating could be easy and enjoyable. That idea became the foundation of MyDiet360: making better food choices achievable, not intimidating.
