Ingredients
For the Dough (Fathead Dough)
- 1 ½ cups shredded mozzarella cheese
- 2 tbsp cream cheese
- 1 cup almond flour
- 1 large egg
- ½ tsp baking powder
- ¼ tsp salt
Filling Options (Choose any):
Pepperoni & Cheese
- ½ cup shredded mozzarella
- 8–10 pepperoni slices
- 2 tbsp low-carb pizza sauce (optional)
Chicken & Cheese
- ½ cup shredded chicken
- ¼ cup cream cheese
- 2 tbsp cheddar cheese
Beef & Cheddar
- ½ cup cooked ground beef (seasoned)
- ¼ cup shredded cheddar
Instructions
- Make the Dough
Melt mozzarella and cream cheese in the microwave for 60–90 seconds. Stir until smooth. Add almond flour, salt, baking powder, and egg. Mix and knead until a soft dough forms. - Roll Out the Dough
Place dough between two parchment sheets. Roll into a rectangle about ¼ inch thick. - Cut & Fill
Cut the dough into 4 rectangles. Add your chosen filling to the center of each one. - Fold & Seal
Fold the dough over the filling and press edges with fingers or a fork to seal. - Bake
Place on a parchment-lined baking tray. Bake at 375°F (190°C) for 15–18 minutes, or until golden brown. - Serve
Let them cool 5 minutes before eating.
